If you know me, you know I’m a little obsessed with meal planning for the week ahead.
I even have an app: MealBoard (not sponsored, but open to it). MealBoard makes it incredibly easy to plan and store recipes, and I can sync the meal plan to my roommate’s calendars (fancy).
I also like to print out recipes I find online or tear out of magazines and put them in a binder. Old school? Yes. But hey, if you had a super cute binder with chic green ferns printed all over it you’d use it all the time too.
It’s my mania, and I accept it. Now, you get to benefit from it.
Here’s what’s cooking next week:
Monday – We are eating out with our foodie BFFs! If not, I’d be making Avocado Pesto Zoodles with Roast Chicken.
Tuesday – If it’s summer, I’m grilling. I’ve been craving some Skirt Steak Fajitas!
Wednesday – This is going to be an intense work day, so we’re making it easy with some Sizzlefish Crabcakes and caesar salad.
Thursday – Going all veggie today with these Mushroom and Green Bean Stir Fry Noodles.
Friday – I’ll be firing up my cast-iron grill to make Fig Jam and Arugula Burgers (pretty self explanatory), grilled corn on the cob, and grilled asparagus. Grill. all. the. things.
Saturday – I’ve been wanting to try out these Avocado and Beef Quesadillas from Damn Delicious! (love her) I’ll be subbing the cheese for my favorite dairy-free shredded cheese brand, So Delicious. Because team #nocheesetillthewedding </3
Sunday – Who else loves breakfast for dinner? I’ll be grabbing some yellow squash, cherry tomatoes, and fresh eggs from the farmer’s market and making a Farmer’s Market Frittata. (recipe coming this week!) Use whatever veggies seem best to you. Some other yummy combinations: mushroom and shallot, or asparagus and leek.
